David Fresh Basil Kachumbari

Made with David Fresh tomatoes, spicy red onions, tasty basil and a smooth lime dressing, this fresh and tasty salad will rival any kachumbari at a restaurant! Enjoy this gluten-free, dairy-free, and low-carb salad as a light lunch or delicious side to all your favorite main courses.

Ingredients

  • 5 large David Fresh medium-ripe tomatoes (chopped into 1-inch cubes)

  • 1/2 David Fresh red onion (chopped)

  • 10 David Fresh basil leaves (chopped)

  • 3 tbsp oil (olive if possible)

  • 3 tbsp balsamic vinegar

  • 1 clove garlic (minced)

  • salt and fresh ground black pepper (to taste)

Instructions

1. Add the tomatoes, onion, and fresh basil to a large salad bowl. Gently mix to combine.

2. In a separate bowl whisk together the olive oil, balsamic vinaigrette, garlic, salt, and pepper.

3. Combine the tomatoes with the vinaigrette. Allow salad to rest for 5-10 minutes at room temperature to allow flavors to marinate together. Enjoy!

Serving suggestions:

  • Step away from the traditional Kachumbari and add cucumber, avocado and David Fresh peppers to the mix
