Roasted Tomatoes

These oven roasted tomatoes are simply delicious. And when we say simple, we mean it! Such a straight forward recipe that even a child could make!
Snack on them by themselves, serving them in pasta, or even just as a side dish.
These Roasted Tomatoes are the perfect addition to any meal!

Ingredients

10 ripe tomatoes

1 tablespoon olive oil
-
½ tablespoon balsamic vinegar
-
1 clove garlic minced

1 tablespoon David Fresh basil, chopped
-
2 tablespoons shredded parmesan cheese (optional)

salt and pepper to taste
Instructions
1. Preheat oven to 450°F.
2. Wash tomatoes and cut in half.
3. Place tomatoes in a large bowl, add remaining ingredients and toss.
4. Place tomatoes in a single layer in a rimmed baking pan or dish. Roast 20-30 minutes or to desired doneness.
5. Remove from oven and sprinkle with salt and pepper. Allow to cool for 5-10 minutes before tasting.
Alternative Roasting Methods:
If you don't have an oven, find your largest saucepan and cover the bottom with 1inch of water. Place your dish with the tomatoes inside your saucepan and cover. Cook until tender, checking every 5 minutes on the water level.

Serving suggestions:

Perfect as a snack or a side to your main meal

Cook pasta and mix straight into the noodles. Sprinkle with additional parmesan.

Add a block of feta cheese in the dish before you put it into the oven. The feta will cook with the tomatoes. After 30 minutes, remove and mix thoroughly to make a delicious, creamy pasta sauce.
