Classic Tomato Sauce

Homemade tomato sauce is one of the easiest dishes to make in Uganda. It's versatility means it can be used with pasta, stew, rice, pizza and almost any other Italian themed dish. Every ingredient is readily available locally, and as an added bonus, this sauce can be cooked in one saucepan on any type of stove, and it's guaranteed to be a favourite of the whole neighbourhood.
What a brilliant way to get those healthy, affordable vegetables into more of your meals!

Ingredients

1 tablespoon of Extra virgin olive oil (or cooking oil)

1 David Fresh Onion, finely chopped

2 cloves of garlic, finely diced

1 clove, finely diced (optional)

10 ripe David Fresh tomatoes, peeled and diced.

5 leaves of David Fresh Basil, torn

Salt to taste
Instructions
1. Heat the olive oil in a medium saucepan over medium-low heat.
2. Add the onions and cook until translucent but not brown; about 5-7 minutes.
3. Add the garlic and continue cooking for 1-2 minutes.
4. Add the chopped tomatoes and salt to taste.
5. Bring to a boil then lower the heat to a simmer, cover leaving a little air to escape and cook for 30 minutes stirring often.
6. Remove from heat and stir in the torn basil leaves.
Serving suggestions:

Pour over cooked pasta, and top with some grated cheese

Use as a sauce on pizza base
-
Add cooked chicken pieces and serve with rice or posho
