Tomato Soup

Honestly the best (and easiest) homemade tomato soup recipe made with fresh tomatoes, garlic, olive oil, caramelized onions and butter - it's that simple!
Perfect for a cold night, or for rainy season to fill you with flu fighting vitamins and to warm your stomach. Serve with bread to make it extra filling and you've got a fantastic meal for the family

Ingredients

1 tablespoon of Extra virgin olive oil (or cooking oil)

1 David Fresh Onion, finely chopped

2 cloves of garlic, finely diced

10 ripe David Fresh tomatoes, peeled and diced (or grated).

1 cup of water
-
Salt and Pepper to taste
OPTIONAL EXTRAS -
2 tablespoons of butter (or blueband)

Royco Chicken Stock
-
Milk or Cream
Instructions
1. Wash, peel and grate the tomatoes.
2. Heat the oil in a large saucepan over medium-low heat.
3. Add the onions and cook until translucent but not brown; about 5-7 minutes.
4. Add the garlic and continue cooking for 1-2 minutes.
5. Add the grated tomatoes and salt to taste, then the water (and chicken stock and butter if you choose).
5. Stir, and bring to a boil then lower the heat to a simmer, cover leaving a little air to escape and cook for 40-50 minutes stirring often (the longer you can cook, the richer the flavour).
6. Remove from heat and serve with bread and butter.
Serving Suggestions:

Sprinkle in a dash of chilli (pilipili) for a spicier taste

Add a small amount of milk or cream (or sour cream!) for a smoother soup

Chop up some David Fresh basil for a delicious garnish
